– 1 red bell pepper, diced
– 1 yellow bell pepper, diced
– 1 cup (200g) Arborio rice or paella rice
– 1/2 teaspoon saffron threads, soaked in 2 tablespoons warm water
– 1 teaspoon smoked paprika
– 1/2 teaspoon dried oregano
– 1/2 teaspoon crushed red pepper flakes (optional)
– 4 cups (960ml) chicken broth
– 1 cup (240ml) diced tomatoes, canned or fresh
– 1 cup (150g) frozen peas
– 1/2 cup (75g) black olives, pitted and sliced
– Salt and pepper to taste
– 1/4 cup (15g) fresh parsley, chopped
– Lemon wedges for serving

### Method

1. **Prepare the Ingredients:** Gather and measure out all the ingredients. Soak the saffron threads in 2 tablespoons of warm water.

2. **Cook the Chicken and Chorizo:**
– Heat 1 tablespoon of olive oil in a large paella pan or wide skillet over medium-high heat.
– Add the chicken pieces and cook for about 5-7 minutes until lightly browned. Remove with a slotted spoon and set aside.
– In the same pan, add the chorizo slices and cook for 3-4 minutes until they release some oil and turn slightly crispy. Remove and set aside with the chicken.

3. **Sauté the Vegetables:**
– Add the remaining tablespoon of olive oil to the pan.
– Sauté the chopped onion and minced garlic for about 3-4 minutes until softened.
– Add the diced red and yellow bell peppers and cook for another 5 minutes until they start to soften.

4. **Cook the Rice:**
– Stir in the Arborio rice and cook for 2 minutes, allowing it to absorb some of the oil and flavours.
– Add the smoked paprika, dried oregano, and optional crushed red pepper flakes. Stir to coat the rice.

– Pour in the soaked saffron (including the water), chicken broth, and diced tomatoes.
– Return the chicken and chorizo to the pan, and bring the mixture to a simmer.
– Reduce the heat to medium-low and let it simmer uncovered for 20-25 minutes, stirring occasionally, until the rice is cooked and the liquid is mostly absorbed.

6. **Add the Peas and Olives:**
– Stir in the frozen peas and sliced black olives and cook for an additional 5 minutes until heated through.
– Season with salt and pepper to taste.

7. **Garnish and Serve:**
– Remove the pan from the heat and let the paella rest for 5 minutes.
– Sprinkle freshly chopped parsley over the top.
– Serve with lemon wedges on the side for a bright, zesty finish.
