– 2 tablespoons olive oil
– 1 large onion, finely chopped
– 3 garlic cloves, minced
– 1 teaspoon ground cumin
– 1 teaspoon ground coriander
– 1 teaspoon smoked paprika
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon cayenne pepper (optional)
– 2 cans (400g each) chickpeas, drained and rinsed
– 1 can (400g) chopped tomatoes
– 1/4 cup tomato paste
– 3 cups vegetable broth
– 1 medium carrot, diced
– 1 red bell pepper, diced
– 1 zucchini, diced
– Salt and pepper, to taste
– 1/4 cup fresh parsley, chopped
– 1/4 cup fresh cilantro, chopped
– 1 lemon, cut into wedges for serving
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the finely chopped onion and sauté for 5-7 minutes until translucent.
3. Stir in the minced garlic, ground cumin, ground coriander, smoked paprika, ground cinnamon, and cayenne pepper (if using). Cook for 1-2 minutes until fragrant.
4. Add the diced carrot, red bell pepper, and zucchini. Sauté for about 5 minutes until the vegetables start to soften.
