Ingredients

– 200g fresh spinach
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 100g feta cheese, crumbled
– 50ml heavy cream
– 2 tbsp olive oil
– 1 egg, beaten (for egg wash)
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 tsp dried thyme
– 1/4 tsp nutmeg (optional)

Method

  1. Preheat your oven to 220°C (425°F).
  2. Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional 1 minute.
  4. Add the sliced mushrooms to the pan and cook until they release their moisture and become golden brown, approximately 8-10 minutes.
  5. Add the fresh spinach to the mushroom mixture and cook until wilted, about 2-3 minutes.
