Ingredients
– 500g gnocchi
– 2 chicken breasts (about 400g), diced
– 2 tablespoons olive oil
– 1 medium onion, finely chopped
– 3 cloves garlic, minced
– 200g fresh spinach
– 1 cup (240ml) heavy cream
– 100g pesto sauce
– 50g grated Parmesan cheese
– Salt and pepper to taste
– Fresh basil leaves, for garnish (optional)
Method
1. Bring a large pot of salted water to a boil and cook the gnocchi according to the package instructions. Drain and set aside.
2. In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and cook for about 5-7 minutes until fully cooked and lightly browned. Remove the chicken from the skillet and set aside.
3. In the same skillet, add the chopped onion and cook for about 3-4 minutes until it becomes translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
4. Reduce the heat to medium, add the fresh spinach, and cook for 2-3 minutes until wilted.
5. Pour in the heavy cream and pesto sauce, stirring well to combine. Bring the mixture to a gentle simmer and cook for 2-3 minutes until the sauce thickens slightly.
6. Add the cooked chicken back to the skillet, along with the drained gnocchi. Stir to combine and cook for another 2 minutes to ensure all ingredients are heated through.
