  • 1 tsp dried oregano
  • 1 tsp ground allspice
  • 3 tbsp olive oil
  • Salt and pepper, to taste
  • 500ml whole milk
  • 60g unsalted butter
  • 60g plain flour
  • 2 large eggs, beaten
  • 60g grated Parmesan cheese
  • 1/4 tsp ground nutmeg

Method

  1. Prepare the Aubergines: Preheat your oven to 200°C (180°C fan/gas mark 6). Lightly brush the aubergine slices with olive oil and season with salt and pepper. Arrange them on a baking tray and roast for 20-25 minutes until golden and tender. Set aside.
