– 8 pork sausages
– 1 tablespoon olive oil
– 1 large onion, sliced
– 2 cloves garlic, minced
– 330 ml Guinness stout
– 2 tablespoons brown sugar
– 2 teaspoons Dijon mustard
– 1 tablespoon Worcestershire sauce
– Salt, to taste
– Black pepper, to taste
Method
1. **Prepare the Colcannon**:
– In a large pot, add the chopped potatoes and cover them with cold water. Add a pinch of salt to the water. Bring to a boil over high heat, then reduce to a simmer. Cook the potatoes for about 15-20 minutes, or until they are fork-tender.
– While the potatoes are cooking, blanch the chopped kale. Bring a separate pot of water to a boil, add the kale, and cook for 3-5 minutes until bright green and tender. Drain and set aside.
– Once the potatoes are cooked, drain them and return to the pot. Add the butter and milk. Mash the potatoes until smooth, then fold in the kale and spring onions. Season with salt and black pepper to taste. Keep warm.
