– 500g boneless, skinless chicken breast, cut into strips
– 200g baby spinach leaves
– 1 large onion, finely chopped
– 3 cloves garlic, minced
– 250g mushrooms, sliced
– 2 tablespoons olive oil
– 1 tablespoon unsalted butter
– 150ml chicken stock
– 200ml sour cream
– 2 tablespoons plain flour
– 1 tablespoon Dijon mustard
– 1 teaspoon paprika
– Salt and pepper to taste
– 1 tablespoon fresh parsley, chopped (for garnish)
Method
1. Heat a large pan over medium-high heat and add 1 tablespoon of olive oil and the butter. Once the butter has melted, add the chicken strips. Season with salt and pepper, and cook for about 5-7 minutes, until the chicken is golden brown and cooked through. Remove from the pan and set aside.
2. In the same pan, add the remaining 1 tablespoon of olive oil. Sauté the onion for about 3 minutes until it becomes translucent, then add the garlic and cook for another 1 minute until fragrant.
3. Add the mushrooms to the pan and cook, stirring occasionally, for about 5 minutes, until they are softened and lightly browned.
