– 4 ripe pears, cored and sliced
– 1 tablespoon fresh lemon juice
– 1/4 cup brown sugar, packed
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon ground ginger
– 1/2 cup rolled oats
– 1/2 cup almond flour
– 1/4 cup coconut oil, solid
– 1/4 cup maple syrup
– 1 teaspoon vanilla extract
– Pinch of salt
Method
1. Preheat the oven to 350°F (175°C).
2. In a large mixing bowl, toss the sliced pears with the fresh lemon juice to coat evenly. Sprinkle the brown sugar, 1/4 teaspoon of the cinnamon, a pinch each of nutmeg and ginger over the pears, and toss again to distribute the spices evenly.
3. Transfer the spiced pear mixture into a medium-sized baking dish, spreading out into an even layer.
4. In another mixing bowl, combine the rolled oats, almond flour, the remaining 1/4 teaspoon of cinnamon, ginger, and a pinch of salt.
5. Add the solid coconut oil, maple syrup, and vanilla extract to the dry mix. Using your fingers or a pastry cutter, work the ingredients together until the mixture resembles coarse breadcrumbs.
6. Sprinkle the crumble mixture over the spiced pears in the baking dish, making sure to cover the fruit completely.
7. Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the pears are tender when pierced with a fork.
