Hello, food lovers! Today, I’m excited to dive into the realm of creamy indulgence with a dish that’s perfect for any time you need a touch of comfort and sophistication in your meal. We’re talking about Rich and Creamy Polenta with Sautéed Wild Mushrooms and Thyme—a heavenly pairing that’s sure to impress anyone from dear friends to the foodie spouse.
Polenta, in my book, is a bit like a soft, warm hug in a bowl. It’s luscious, adaptable, and truly a canvas that begs for creativity. Using vegetable stock to cook the polenta adds depth and a savoury backbone, while the addition of Parmesan and butter makes it beautifully rich and smooth.
Now, where would this comforting base be without a topping that matches its allure? Enter the wild mushrooms. When cooked, these beauties take on a delightful complexity; their earthy sweetness and meaty texture make for a sensational duet with the creamy polenta. I can’t emphasize enough how a hint of thyme elevates this dish—we’re talking a perfume so alluring, it could charm its way into becoming your kitchen’s signature scent. The fact that it only requires a sprinkling for such enhancement makes it one of those secret little tricks you’ll want to keep tucked away in your culinary repertoire.
This is a dish I particularly enjoy on a cool rainy afternoon, the kind where the mist blankets the garden and there’s a promise of respite that can only be met with food that warms from within. Picture yourself cozying up to this meal with a glass of your favourite white wine or perhaps a gentle red—whatever fits your mood.
If you haven’t explored much with polenta before, now is the time. It’s easier than most people think and incredibly forgiving—just remember to stir! Be fearless in adding your personal twist, perhaps with some sautéed spinach or a poached egg perched on top.
Embark on this culinary journey, and you might discover a new favourite that you can whip up to impress company or enjoy in a blissful moment of solitude. Happy cooking, and may your kitchen be filled with the delicious aroma of thyme-infused mushrooms! Let me know how it turns out for you; I’d love to hear about your twist on this classic.
Ingredients

– 400g mixed wild mushrooms (such as shiitake, oyster, and chanterelle)
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon fresh thyme leaves
– Salt and pepper to taste
– 2 tablespoons chopped fresh parsley, for garnish
Method
1. In a medium saucepan, bring the vegetable stock to a boil.
2. Gradually whisk in the polenta, reducing the heat to low. Cook, stirring constantly, for about 25-30 minutes, or until the polenta is thick and creamy.
3. Off the heat, stir in the grated Parmesan cheese and butter until fully melted and incorporated. Season with salt and pepper to taste. Cover to keep warm.
4. While the polenta is cooking, clean the wild mushrooms and slice them into bite-sized pieces.
5. In a large skillet, heat the olive oil over medium-high heat.
6. Add the minced garlic and sauté for about 1 minute until fragrant.
7. Add the mushrooms and fresh thyme leaves. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.
8. Season the mushrooms with salt and pepper to taste.
9. To serve, spoon the creamy polenta onto plates and top with the sautéed wild mushrooms. Garnish with chopped fresh parsley.
10. Enjoy immediately while hot.
