– 1/2 teaspoon ground black pepper
– 1 cup quinoa (200g), rinsed and drained
– 2 cups vegetable broth (480ml)
– 1 cup cherry tomatoes (150g), halved
– 1/2 cucumber (100g), diced
– 1/4 cup red onion (40g), finely chopped
– 1/4 cup fresh parsley (15g), chopped
– 1/4 cup fresh mint (15g), chopped
– 1/4 cup crumbled feta cheese (40g)
– 2 tablespoons lemon juice
– 1 tablespoon lemon zest
– 1/2 teaspoon dried oregano
– 1/2 teaspoon dried thyme
– 1/4 teaspoon red pepper flakes (optional)

Method

1. Preheat the oven: Set your oven to 200°C (390°F) and line a baking sheet with parchment paper.
