– 2 tablespoons vegetable oil

For the Teriyaki Glaze:
– 100ml soy sauce
– 50ml mirin
– 2 tablespoons honey
– 1 tablespoon rice vinegar
– 1 teaspoon grated ginger
– 1 clove garlic, minced

For the Sautéed Sesame Greens:
– 500g mixed green vegetables (such as broccoli, green beans, and snap peas)
– 2 tablespoons sesame oil
– 2 cloves garlic, thinly sliced
– 1 tablespoon toasted sesame seeds
– Salt and pepper, to taste

Optional for garnish:
– Spring onions, thinly sliced
– Fresh coriander, chopped
– 1 teaspoon chilli flakes (optional for a spicy kick)

Method

1. Preheat your pan over medium-high heat. Season the salmon fillets with salt and pepper on both sides.

2. Add the vegetable oil to the pan. Once hot, add the salmon fillets skin-side down, and cook for about 3-4 minutes until the skin is crispy. Flip the fillets and cook for another 3 minutes or until the desired doneness is reached. Remove from the pan and set aside.

3. For the teriyaki glaze, combine the soy sauce, mirin, honey, rice vinegar, grated ginger, and minced garlic in a small saucepan. Heat the mixture over medium heat, stirring occasionally, until the honey dissolves and the sauce is well combined. Increase the heat to medium-high and simmer for about 5-7 minutes or until the sauce thickens slightly. Remove from heat.

4. Brush the salmon fillets generously with the teriyaki glaze, reserving some for serving.
