Ingredients

– 4 pork chops, about 1 inch thick
– 1/2 cup fresh orange juice
– 1/4 cup fresh lime juice
– 6 cloves garlic, minced
– 2 teaspoons ground cumin
– 1 teaspoon oregano (dried)
– 1/4 teaspoon red pepper flakes
– 1/2 cup olive oil, plus 2 tablespoons for grilling
– Salt and freshly ground black pepper, to taste
– 1 can (15 ounces) black beans, drained and rinsed
– 1 ripe avocado, diced
– 1 small red onion, finely chopped
– 1 cup cherry tomatoes, halved
– 1/4 cup fresh cilantro, chopped
– 1 tablespoon red wine vinegar
– 2 teaspoons honey

Method

1. In a bowl, whisk together the fresh orange juice, lime juice, minced garlic, ground cumin, oregano, and red pepper flakes. Gradually pour in 1/2 cup of olive oil while continuing to whisk until the marinade is well combined.

2. Season the pork chops generously with salt and freshly ground black pepper. Place them in a large resealable plastic bag and pour in the marinade. Seal the bag, ensuring the chops are well coated with the marinade. Place in the refrigerator and let marinate for at least 2 hours, or overnight for best flavor.

3. Preheat your grill to medium-high heat, around 375°F (190°C), and oil the grates with the remaining 2 tablespoons of olive oil to prevent sticking.
