– 4 salmon fillets (about 6 ounces each)
– 2 tablespoons Cajun seasoning

– 4 ears fresh corn, kernels removed (or 3 cups frozen corn kernels, thawed)

– 1 medium green bell pepper, diced
– 1 small yellow onion, finely chopped
– 2 cloves garlic, minced
– 1/2 cup heavy cream
– 2 tablespoons unsalted butter
– 1/4 cup green onions, sliced
– 1 teaspoon smoked paprika
– 1/2 teaspoon dried thyme
– 1/2 teaspoon cayenne pepper (optional, adjust to heat preference)
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Method
1. Begin by preparing the corn Maque Choux. Heat a large skillet over medium heat and add the butter to melt. Once melted, add the onions, red bell pepper, green bell pepper, and a pinch of salt. Cook, stirring occasionally, for about 5-6 minutes until the vegetables are soft and the onions are translucent.
2. Stir in the garlic and cook for an additional minute until fragrant. Add in the corn kernels along with the smoked paprika, dried thyme, and cayenne pepper if using. Cook for another 5-7 minutes, stirring occasionally, until the corn is tender.
3. Reduce the heat to low and stir in the heavy cream. Allow the mixture to simmer gently for about 3-4 minutes until it thickens slightly. Season with salt and pepper to taste, then stir in half of the sliced green onions. Keep warm while you prepare the salmon.
4. Preheat your oven to 375°F (190°C) for the salmon. Line a baking sheet with foil or parchment paper for easy clean-up.
5. Pat the salmon fillets dry with paper towels. Sprinkle the Cajun seasoning evenly on both sides of the salmon fillets, pressing it gently into the flesh to adhere.
6. Heat the olive oil in a large, oven-proof skillet or a non-stick pan over medium-high heat. Once the oil is hot, add the salmon fillets skin-side up and sear for about 2-3 minutes, or until a nice blackened crust has formed.
7. Flip the salmon fillets so they are skin-side down, and then transfer the skillet or pan to the preheated oven. Bake for 6-8 minutes, or until the salmon is cooked through and flakes easily with a fork. The exact time may vary depending on the thickness of the fillets.
8. Once the salmon is cooked, remove the skillet or pan from the oven and allow the salmon to rest for a few minutes.
9. Serve the blackened salmon hot, with a generous helping of the creamy corn Maque Choux on the side. Garnish with the remaining green onions and chopped fresh parsley.
