– 4 sea bream fillets (approx. 150g each)
– 2 tablespoons olive oil
– Salt, to taste
– Freshly ground black pepper, to taste
For the Olive Tapenade:
– 150g pitted Kalamata olives
– 2 anchovy fillets
– 1 garlic clove
– 1 tablespoon capers, drained
– 1 teaspoon fresh lemon juice
– 3 tablespoons extra virgin olive oil
– 1 teaspoon fresh thyme leaves
For the Fennel Citrus Salad:
– 1 large fennel bulb, thinly sliced
– 2 oranges, segmented
– 1 small red onion, thinly sliced
– 50g arugula (rocket)
– 2 tablespoons extra virgin olive oil
– 1 tablespoon white wine vinegar
– Zest of 1 lemon
– Salt, to taste
– Freshly ground black pepper, to taste
Method
1. Start by making the olive tapenade. Combine the Kalamata olives, anchovy fillets, garlic clove, capers, and fresh lemon juice in a food processor. Pulse until coarsely chopped. With the motor running, slowly add the 3 tablespoons of extra virgin olive oil until the mixture becomes a coarse paste. Stir in the fresh thyme leaves and set aside.
2. Prepare the fennel citrus salad. In a large mixing bowl, combine the thinly sliced fennel bulb, orange segments, and thinly sliced red onion. In a separate small bowl, whisk together the 2 tablespoons extra virgin olive oil, white wine vinegar, lemon zest, salt, and black pepper. Dress the salad with the vinaigrette and gently toss to coat everything evenly. Add the arugula to the bowl and give it another quick toss. Let the salad sit for about 10-15 minutes for the flavors to meld together.
3. Preheat a non-stick pan over medium-high heat. While the pan is heating, pat the sea bream fillets dry with paper towels and season both sides with salt and black pepper.
4. Add 2 tablespoons olive oil to the hot pan. Carefully place the sea bream fillets in the pan, skin-side down. Cook for about 4 minutes without moving the fillets to allow the skin to become crisp and golden brown.
5. Gently flip the sea bream fillets over and cook for an additional 2-3 minutes, or until the fish is just cooked through and opaque in the middle. The exact cooking time will depend on the thickness of the fillets.
6. Once the fish is cooked, remove it from the pan and let it rest for a couple of minutes.
7. To serve, spread a spoonful of olive tapenade on each plate. Place a sea bream fillet on top of the tapenade and accompany each fillet with a generous serving of the fennel citrus salad.
