Ingredients

– 200g chorizo, sliced
– 250g button mushrooms, halved
– 3 tablespoons olive oil
– 1 medium onion, finely chopped
– 3 cloves garlic, minced
– 125ml red wine
– 1 tablespoon fresh thyme leaves
– Salt and pepper, to taste
– 1 baguette, sliced for serving
– Fresh parsley, chopped, for garnish

Method

1. Heat a large pan over medium heat and add 1 tablespoon of olive oil.
2. Add the sliced chorizo to the pan and cook for 3-4 minutes, or until it starts to release its oils and becomes slightly crispy. Remove the chorizo from the pan and set aside on a paper towel-lined plate.
3. In the same pan, add the remaining 2 tablespoons of olive oil. Add the chopped onion and cook for about 3 minutes until it becomes translucent.
4. Stir in the minced garlic and cook for an additional minute until fragrant.
5. Add the halved mushrooms to the pan. Cook for 5 minutes, stirring occasionally, until the mushrooms are golden and softened.
6. Pour the red wine into the pan and bring to a simmer. Allow the wine to reduce by half, approximately 5-7 minutes.
