– 1 teaspoon ground coriander
– 1 teaspoon ground cumin
– 1/2 teaspoon chili powder (adjust to taste)
– 400ml coconut milk
– 400ml water
– 1 teaspoon salt (adjust to taste)
– 200g chopped tomatoes (canned or fresh)
– 2 tablespoons fresh coriander leaves, chopped (for garnish)
– Lemon wedges (for serving)
Method
1. Rinse the red lentils in cold water until the water runs clear. Set aside.
