Ingredients

– 200g fresh spinach, washed
– 4 large eggs
– 100g feta cheese, crumbled
– 1 small onion, finely chopped
– 2 cloves garlic, minced
– 2 tablespoons olive oil
– 1 teaspoon dried oregano
– Salt and pepper, to taste
– 2 tablespoons fresh dill, chopped
– 1 tablespoon butter (for greasing)
– 50ml cream
– Pinch of nutmeg

Method

1. Preheat your oven to 180°C (350°F).

2. Grease a medium-sized baking dish with the butter. Set aside.

3. Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté for 5 minutes, or until soft and translucent.

4. Add the garlic to the skillet and sauté for an additional 1 minute, until fragrant.

5. Stir in the fresh spinach and cook until wilted, about 3-4 minutes.

6. Add the oregano, salt, pepper, and nutmeg to the spinach mixture, stirring well to combine. Remove the skillet from the heat.

7. Spread the spinach mixture evenly across the greased baking dish.

8. Crack the eggs evenly over the spinach mixture, ensuring they are spaced apart.

9. Pour the cream evenly over the top of the dish, being careful not to break the yolks.

10. Sprinkle the crumbled feta cheese over the eggs and spinach.

11. Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still runny.

12. Remove from the oven and sprinkle fresh dill over the top before serving. Enjoy your creamy spanakopita-inspired baked eggs hot!
