Ingredients

– 4 large croissants
– 4 eggs
– 240 ml whole milk
– 2 tablespoons granulated sugar
– 1 teaspoon pure vanilla extract
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– Pinch of salt
– 4 tablespoons unsalted butter, divided
– 2 ripe bananas, sliced
– 2 tablespoons brown sugar
– 200 ml crème fraîche
– 1 tablespoon icing sugar
– Additional ground nutmeg, for garnish
– Maple syrup, for serving (optional)
– Confectioners’ sugar, for dusting (optional)
– Fresh mint leaves, for garnish (optional)

Method

1. Start by cutting each croissant in half as if you were making a sandwich, and set them aside.

2. In a mixing bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt until well combined.

3. Preheat a non-stick skillet or frying pan over medium heat and add 1 tablespoon of unsalted butter to the pan.

4. Dip each croissant half briefly into the egg mixture, making sure both sides are well-coated but not soggy.

5. Once the butter has melted and is slightly bubbling, place the dipped croissants into the pan. Cook for about 2 to 3 minutes on each side, or until they are golden brown and slightly crispy. Remove from the pan and keep them warm on a plate covered with foil or in a low oven at 50°C (120°F).

6. Wipe the skillet with a paper towel if necessary, and add another tablespoon of unsalted butter.

7. When the butter is melted, add the sliced bananas and sprinkle over the brown sugar. Cook for about 2 minutes on each side, or until they are nicely caramelized. Remove from heat.

8. In a small bowl, mix the crème fraîche with the icing sugar until smooth.

9. To serve, place two halves of the cooked croissant French toast on each plate. Top with the caramelized bananas and a dollop of the sweetened crème fraîche.

10. If desired, give a light dusting of confectioners’ sugar over the top, drizzle with maple syrup, and garnish with a sprinkle of ground nutmeg and fresh mint leaves.
