– 4 tbsp Dijon mustard
– 8 strips of bacon
– 2 medium-sized onions, thinly sliced
– 4 pickles, thinly sliced
– Salt and pepper, to taste
– 2 tbsp vegetable oil
– 2 cups beef broth
– 1 cup red wine (optional)
– 1 tbsp tomato paste
– 2 tbsp all-purpose flour
– Fresh parsley, for garnish
For the Creamy Mashed Potatoes:
– 1 kg potatoes, peeled and quartered
– 100 ml milk
– 50g unsalted butter
– Salt, to taste
– Freshly ground black pepper, to taste
For the Braised Red Cabbage:
– 1 medium red cabbage, finely shredded
– 1 onion, finely sliced
– 2 apples, peeled and grated
– 2 tbsp vegetable oil
– 3 tbsp apple cider vinegar
– 2 tbsp brown sugar
– Salt and pepper, to taste
Method
1. **Prepare the Rouladen:**
– Lay each beef slice flat and spread a tablespoon of Dijon mustard over the surface. Season lightly with salt and pepper.
– Place two strips of bacon, a few slices of onion, and pickles on each piece of beef.
– Carefully roll each beef slice tightly, tucking in the sides as you go. Secure with kitchen twine or toothpicks.
2. **Brown the Rouladen:**
– Heat the vegetable oil in a large, heavy-bottomed skillet or Dutch oven over medium-high heat.
– Once hot, add the rouladen and brown on all sides for about 8-10 minutes. You may need to work in batches to avoid overcrowding the pan.
– Remove the rouladen and set aside.
3. **Prepare the Gravy:**
– In the same pan, add the remaining onions and cook until softened, about 5 minutes.
