Ingredients

– 250g halloumi cheese, sliced
– 1 tablespoon harissa paste
– 2 tablespoons honey
– 1 cup quinoa
– 2 cups water
– 1/2 teaspoon salt
– 1/4 cup fresh mint leaves, finely chopped

– 1 small red onion, finely diced
– 1 cucumber, deseeded and diced
– 3 tablespoons olive oil
– Juice of 1 lemon
– Salt and pepper to taste

Method

1. Begin by rinsing the quinoa under cold water to remove any bitterness. In a medium saucepan, combine the rinsed quinoa, 2 cups of water, and 1/2 teaspoon of salt. Bring to a boil, reduce the heat to low, cover, and simmer for 15-20 minutes or until the quinoa is fluffy and the water has been absorbed. Remove from heat and let it stand for 5 minutes, then fluff with a fork.
