– 6 bone-in, skin-on chicken thighs
– 3 tablespoons olive oil
– 4 cloves garlic, minced
– 2 lemons, thinly sliced
– 1 tablespoon fresh thyme leaves
– 1 tablespoon fresh rosemary, chopped
– 1 teaspoon smoked paprika
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 teaspoon red pepper flakes (optional)
Method
1. Preheat your oven to 200°C (400°F).
2. In a large bowl, combine olive oil, garlic, thyme leaves, rosemary, smoked paprika, salt, black pepper, and red pepper flakes (if using).
3. Add chicken thighs to the bowl, and coat them thoroughly with the herb and oil mixture.
4. Arrange the lemon slices on the bottom of a baking dish.
5. Place the chicken thighs on top of the lemon slices, skin-side up.
