– 2 tablespoons fresh coriander (cilantro), chopped
– 1 teaspoon sesame seeds, for garnish
– 1 spring onion (green onion), thinly sliced, for garnish

Method

1. Preheat your oven to 200°C (390°F). Line a baking sheet with parchment paper.
2. In a small bowl, whisk together miso paste, honey, rice vinegar, and 1 tablespoon of sesame oil until smooth. This will be your glaze for the aubergines.
3. Arrange the aubergine rounds in a single layer on the prepared baking sheet. Brush each round generously on both sides with the honey-miso glaze.
4. Bake in the preheated oven for 25-30 minutes, or until the aubergines are tender and the glaze has caramelized. Halfway through, flip the aubergines and brush with more glaze if desired.
