Pudding Rice, a classic British comfort food, just got a makeover that’s as allergy-friendly as it is scrumptious. Plus, it’s a breeze to whip up, leaving us more time for those unpredictable yet cherished family moments.

– 1 cup pudding rice
– 4 cups oat milk
– 1/4 cup maple syrup
– 1 teaspoon vanilla extract
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1 pinch of salt
– 2 cups mixed berries (strawberries, raspberries, blueberries)
– 1/4 cup water
– 2 tablespoons brown sugar
– 1 teaspoon lemon zest
– Fresh mint leaves for garnish (optional)
– Dairy-free whipped cream for serving (optional)
Method
1. Rinse the pudding rice under cold water until the water runs clear to remove excess starch.
2. Combine the rinsed pudding rice, oat milk, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and a pinch of salt in the Instant Pot. Stir to mix the ingredients well.
3. Attach the lid of the Instant Pot and ensure the valve is set to the sealing position. Select the ‘Porridge’ setting, which typically cooks for 20 minutes on high pressure for most models. If your Instant Pot does not have a Porridge setting, manually set it to cook on high pressure for 20 minutes.
4. While the pudding rice is cooking, prepare the spiced fruit compote. In a small saucepan over medium heat, combine the mixed berries, water, brown sugar, and lemon zest. Bring the mixture to a simmer and let it cook for 8-10 minutes, or until the fruits soften and the sauce thickens slightly. Remove from heat and set aside.
5. Once the Instant Pot has finished cooking, it will beep. Let the pressure release naturally for 10 minutes, then carefully do a quick release for any remaining pressure by turning the valve to the venting position.
6. Remove the lid and give the pudding rice a good stir. The consistency should be creamy; if it is too thick, you can stir in a bit more oat milk until you reach your desired creaminess.
7. Spoon the warm pudding rice into individual serving bowls.
8. Top each bowl of pudding rice with the spiced fruit compote. If using, garnish with fresh mint leaves and a dollop of dairy-free whipped cream.
9. Serve warm and enjoy the homemade, allergy-friendly dessert that the whole family, including Edward, Alexander, Barnaby, and Richard, can relish together.
