– 3 spring onions, chopped
– 2 garlic cloves, minced
– 1 tablespoon fresh ginger, grated

– 400 ml coconut milk
– 250 ml chicken stock
– 2 tablespoons vegetable oil

For the Rice and Peas:
– 300 g basmati rice, rinsed
– 400 g canned red kidney beans, drained and rinsed
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 400 ml coconut milk
– 200 ml water
– 2 sprigs fresh thyme
– 1 Scotch bonnet pepper, whole
– Salt to taste

Method

Method for Jamaican Curry Goat:

1. Marinate the Goat: In a large bowl, combine the cubed goat meat with Jamaican curry powder, chopped onion, spring onions, garlic, ginger, Scotch bonnet pepper, thyme, and ground allspice. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight for best results.

2. Brown the Goat: Heat 2 tablespoons of vegetable oil in a large pot or Dutch oven over medium-high heat. Add the marinated goat meat, reserving any marinade left in the bowl. Brown the meat on all sides for about 5-7 minutes.

3. Add Liquid Ingredients: Pour in the coconut milk and chicken stock, then add any remaining marinade. Stir well to combine and bring to a boil.

4. Simmer the Curry: Lower the heat to medium-low, cover the pot, and let it simmer for 1.5 to 2 hours. Stir occasionally, making sure the meat is tender and the sauce has thickened. Adjust seasoning with salt and pepper to taste.

Method for Rice and Peas:

1. Sauté Aromatics: In a medium pot, add the onion and garlic. Cook over medium heat until the onion becomes translucent, about 3-4 minutes.

2. Add Rice and Liquid: Add the rinsed basmati rice to the pot, followed by the red kidney beans, coconut milk, and water. Stir in the thyme sprigs and Scotch bonnet pepper. Season with salt to taste.

3. Cook the Rice: Bring the mixture to a boil, then reduce heat to low. Cover the pot and let it simmer for 15-18 minutes, or until the rice is cooked and all the liquid is absorbed.

4. Rest and Serve: Remove the pot from heat and let it sit, covered, for 5 minutes before fluffing the rice with a fork. Serve the curry goat alongside the rice and peas for a delightful Caribbean meal.
