Hey there, culinary comrades!
Today, I’m stoked to share something that’s become a roaring hit with my crew at home – a dish that effortlessly marries the robust flavors of Korean cuisine with the casual cool of Mexican street food. It’s a flavor fiesta that satisfies hungry bellies and adventurous palates alike, perfect for shaking up our weeknight dinner routine.
We’re talking about none other than Korean-Inspired Bulgogi Beef Tacos with Kimchi Slaw. Now, before you raise an eyebrow at the fusion, let me tell ya – this is one delicious cultural mash-up that brings a smile to even the pickiest of eaters in my household (and with four little taste testers, that’s saying something!).
Marinading is pretty much like a magic spell in cooking, and the wizardry behind these bad boys lies in the pear-soy concoction that transforms the beef into something spectacularly tender and flavorful. And while this meat soaks up all that marvellous marinade, I knock out a kimchi slaw that’s crunchy, tangy, and just a bit spicy – a real game-changer that I guarantee you’ll want to put on everything.
Now let’s talk about family life for a second. With a bustling household, I’m always on the lookout for recipes that are simple without skimping on flavor. That’s exactly what you get here. A little chopping, a quick sizzle in the pan, and boom – dinner’s on the table. It’s a dish that comes together almost as fast as my kids can ask, “What’s for dinner?”
Slap that succulent bulgogi beef and vibrant slaw on a soft tortilla, hit it with a burst of lime, and you’re in for a riot of textures and tastes. Honestly, it’s like a party in your mouth where everyone – salty, sweet, tangy, and spicy – is invited.
Should the little ones be unsure about the kimchi (let’s face it, fermented cabbage can be a hard sell), I say give it a go anyway. My brood was dubious at first, but now they munch down this tangy treat like champs. It’s all about exposing them to the wide and wonderful world of flavors, and dishes like this make that quest a pure joy.
So there you have it, my friends – a dish that brings a little excitement to the table and proves that trying new things (like a Korean taco) can be a delicious endeavor. Roll up your sleeves, grab those tortillas, and let’s get cooking!
Until next time, keep those taste buds curious, and your plates colorful!

Ingredients
– 500g thinly sliced beef sirloin or ribeye
– 1 ripe pear, grated
– 3 garlic cloves, minced
– 1 small onion, finely chopped
– 50ml soy sauce
– 1 tablespoon sesame oil
– 2 tablespoons brown sugar
– 1 tablespoon honey
– 1 teaspoon freshly ground black pepper
– 2 tablespoons vegetable oil, for frying
– 12 small corn tortillas
For the Kimchi Slaw:
– 200g kimchi, chopped
– 300g white cabbage, shredded
– 1 medium carrot, julienned
– 2 spring onions, thinly sliced
– 2 tablespoons rice vinegar
– 1 teaspoon sugar
– ½ teaspoon salt
– 1 tablespoon gochujang (Korean chili paste)
To Garnish:
– 1 bunch fresh coriander, chopped
– 1 lime, cut into wedges
– Sesame seeds, for sprinkling
Method
1. Begin by preparing the marinade for the beef. In a large mixing bowl, combine the grated pear, minced garlic, finely chopped onion, soy sauce, sesame oil, brown sugar, honey, and black pepper. Mix well until the sugar has mostly dissolved.
2. Add the thinly sliced beef to the marinade, making sure each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to penetrate the meat.
3. While the beef is marinating, prepare the kimchi slaw. In a separate bowl, add the chopped kimchi, shredded cabbage, julienned carrot, and thinly sliced spring onions. In a small bowl, whisk together rice vinegar, sugar, salt, and gochujang to create the dressing. Pour this dressing over the slaw ingredients and toss to combine. Cover and refrigerate until ready to serve.
4. After the beef has marinated, heat a large skillet or frying pan over medium-high heat. Add 1 tablespoon of vegetable oil and let it get hot. Remove the beef from the marinade, shaking off any excess, and cook in batches to not overcrowd the pan. Sear the beef for about 2-3 minutes on each side until it is caramelized and slightly charred. Transfer the cooked beef to a plate and cover loosely with foil to keep warm.
5. In the same pan, if needed, add the remaining tablespoon of vegetable oil and quickly warm the tortillas for about 15-30 seconds on each side to make them pliable and lightly toasted. Wrap them in a clean kitchen towel to keep warm.
6. To assemble the tacos, take a warmed tortilla, lay a few pieces of the cooked bulgogi beef down the middle, and top with a generous amount of the kimchi slaw.
7. Garnish each taco with a sprinkle of chopped fresh coriander, a few sesame seeds, and a squeeze of lime juice.
8. Serve immediately while the beef is still warm and the tortillas soft, with extra lime wedges on the side for those who like a little extra citrus zing. Enjoy your Korean-inspired Bulgogi Beef Tacos with the tangy crunch of kimchi slaw!
