Ingredients
– 4 boneless, skinless chicken breasts (about 600g)
– 2 tablespoons olive oil
– 1 tablespoon orange zest (from one large orange)
– 1/2 cup fresh orange juice (from one large orange)
– 1/3 cup brined green olives, pitted and halved
– 2 tablespoons capers, rinsed and drained
– 3 cloves garlic, minced
– 1 teaspoon dried oregano
– 1/2 teaspoon salt
– 1/4 teaspoon freshly ground black pepper
– 1/4 cup fresh parsley, chopped
– 1 tablespoon butter
– 1/2 teaspoon red pepper flakes (optional)
Method
1. Preheat your oven to 180°C (350°F).
2. Season the chicken breasts with salt and pepper on both sides.
3. In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for about 3 minutes on each side until they are golden brown. Remove the chicken from the skillet and set aside.
4. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
5. Add the orange zest, orange juice, olives, capers, oregano, red pepper flakes (if using), and butter to the skillet. Stir well to combine all the ingredients and bring to a simmer.
6. Return the chicken breasts to the skillet, spooning some of the sauce over the top.
7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked and the internal temperature reaches 75°C (165°F).
