Ingredients
– 4 arctic char fillets (about 150g each)
– 2 tbsp olive oil
– Sea salt, to taste
– Freshly ground black pepper, to taste
– 2 tsp fresh dill, finely chopped
– 800g new potatoes, scrubbed
– 100ml sour cream
– 2 tbsp prepared horseradish
– 1 tbsp whole grain mustard
– 1 tbsp apple cider vinegar
– 1 tsp honey
– 2 tbsp chives, finely snipped
– 1/2 lemon, zest and juice
– Extra dill sprigs for garnish
Method
1. Preheat your oven to 200°C (400°F, gas mark 6).
