- 1 litre vegetable broth
- 1 bunch fresh mint, leaves only (about 30g)
- Salt and black pepper to taste
- Optional: 100ml heavy cream or coconut milk for a creamier texture
Herbed Goat Cheese Crostini
- 1 baguette, sliced into 1cm thick slices
- 200g goat cheese
- 2 tablespoons fresh basil, finely chopped
- 2 tablespoons fresh chives, finely chopped
- 1 tablespoon olive oil
- Salt and black pepper to taste

- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté for about 5-7 minutes, until it becomes soft and translucent.
- Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant.
- Pour in the vegetable broth and bring to a boil.
- Add the frozen peas and cook for 5-7 minutes, until they are tender.
- Remove the pot from the heat. Add the fresh mint leaves to the pot.
- Using an immersion blender, blend the soup until smooth. Alternatively, you can blend the soup in batches in a countertop blender.
- Season with salt and black pepper to taste. If desired, stir in the heavy cream or coconut milk.
- Return the soup to the heat and simmer gently for another 2-3 minutes.
Herbed Goat Cheese Crostini
- Preheat your oven to 180°C (350°F).
- Arrange the baguette slices on a baking sheet and brush lightly with olive oil.
- Bake in the oven for 5-7 minutes, or until the slices are golden and crispy.
- In a small bowl, mix the goat cheese with the finely chopped basil, chives, salt, and black pepper.
- Spread the herbed goat cheese mixture on the toasted baguette slices.
- Serve the crostini alongside the pea and mint soup.
