Ingredients

– 350g linguine pasta
– 400g raw prawns, peeled and deveined
– 3 tablespoons extra-virgin olive oil
– 4 cloves garlic, minced
– 1/2 teaspoon red chili flakes (optional)
– Zest and juice of 1 large lemon
– 60ml white wine
– 150g cherry tomatoes, halved
– Salt, to taste
– Black pepper, freshly ground, to taste
– 1 small bunch of fresh parsley, roughly chopped
– 40g Parmesan cheese, grated (optional)

Method

1. Cook the linguine pasta in a large pot of salted boiling water according to package instructions, usually about 9-11 minutes, until al dente. Reserve 1 cup of pasta water before draining.

2. While the pasta is cooking, heat 2 tablespoons of extra-virgin olive oil in a large skillet over medium heat. Add the minced garlic and red chili flakes and sauté for 1-2 minutes until fragrant but not browned.

3. Increase the heat to medium-high, add the prawns to the skillet, and cook for 2-3 minutes or until they start turning pink, stirring occasionally.

4. Add the white wine to the skillet, allow it to reduce slightly, about 1 minute. Stir in the cherry tomatoes and cook for another 2 minutes until they begin to soften.

5. Lower the heat to medium. Stir in the lemon zest, lemon juice, and season with salt and black pepper. Cook for 1 minute to combine all the flavors.

6. Add the drained pasta to the skillet with the prawns and tomatoes. Toss thoroughly, adding a bit of reserved pasta water if necessary to bring everything together into a light sauce that coats the pasta.

7. Remove the skillet from the heat, stir in the remaining tablespoon of olive oil, and most of the chopped parsley, reserving some for garnish.

8. Serve the linguine hot, garnished with the reserved parsley and grated Parmesan cheese, if desired. Adjust seasoning with extra salt, pepper, or a squeeze of lemon juice to taste.
