Ingredients

– 2 tablespoons olive oil
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 teaspoon ground cumin
– 1 teaspoon sweet paprika
– ½ teaspoon chili flakes (optional)
– 400g can of chopped tomatoes
– 100g fresh spinach leaves, washed and drained
– 4 large eggs
– 100g feta cheese, crumbled
– Salt and pepper to taste
– Fresh coriander or parsley, chopped, for garnish
– Crusty bread, for serving

Method

1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

2. Stir in the garlic and red bell pepper, and cook for an additional 2 minutes until the garlic becomes fragrant.

3. Add the ground cumin, sweet paprika, and chili flakes (if using). Stir well to combine, cooking for 1 minute to release the spices’ aromas.

4. Pour in the canned chopped tomatoes, and season with salt and pepper. Simmer the mixture for 10 minutes, allowing it to thicken slightly.

5. Add the fresh spinach leaves to the skillet, stirring them into the tomato sauce until they are wilted, about 2 minutes.

6. Using a spoon, create four small wells in the mixture. Crack one egg into each well, spacing them evenly around the skillet.

7. Reduce the heat to low, cover the skillet with a lid, and cook the eggs for about 5-7 minutes, or until the egg whites are set but the yolks remain runny.

8. Once the eggs are cooked to your liking, remove the skillet from the heat. Sprinkle the crumbled feta cheese over the top.

9. Garnish with freshly chopped coriander or parsley.
