- 2 tsp chipotle paste
- 1 garlic clove, minced
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/2 tsp salt

- 8 small corn tortillas
- 1 ripe avocado
- 2 tbsp sour cream
- 1 tbsp lime juice
- 1/4 cup fresh cilantro, chopped
- 1/4 red onion, finely diced
- 1/2 cup shredded red cabbage
- 1/2 cup crumbled feta cheese
- 1 lime, cut into wedges
Method
- Heat the olive oil in a large pan over medium heat.
- Add the sliced mushrooms to the pan and sauté for about 5 minutes until they start to soften.
