– 4 large slices of sourdough bread
– 200g shiitake mushrooms, stems removed and caps sliced
– 2 tablespoons soy sauce
– 1 tablespoon honey
– 1 clove garlic, minced
– 1 teaspoon sesame oil
– 4 large eggs
– 1 tablespoon olive oil
– 2 green onions, finely chopped for garnish
– Salt and pepper, to taste
– Fresh herbs (such as parsley or chives), chopped for garnish (optional)

Method

1. Start by preparing the glaze for the mushrooms. In a small bowl, whisk together the soy sauce, honey, minced garlic, and sesame oil until well combined. Set aside.

2. Place a large non-stick frying pan over medium heat and add a tablespoon of olive oil. Once the oil is hot, add the sliced shiitake mushrooms. Sauté for about 5 to 6 minutes, or until the mushrooms begin to soften and brown.

3. Pour the soy sauce mixture over the mushrooms in the pan, stir to coat evenly, and continue to sauté for another 2 to 3 minutes until the mushrooms are fully cooked and the glaze has thickened. Remove from heat and keep warm.
