– 1 large green bell pepper, finely chopped (about 150g)
– 2 large tomatoes, chopped (about 300g)
– 1 teaspoon ginger, minced
– 1 teaspoon garlic, minced
– 2 teaspoons pav bhaji masala
– 1 teaspoon red chili powder
– 1/2 teaspoon turmeric powder
– 200g potatoes, peeled and cubed
– 100g cauliflower florets
– 100g green peas, fresh or frozen
– 2 teaspoons lemon juice
– Salt to taste
– 4 pav buns (or soft bread rolls)
– Fresh cilantro, chopped, for garnish
– Lemon wedges, for serving
– Extra butter, for toasting buns and serving
Method
1. **Prepare the Vegetables:**
– Boil the potatoes and cauliflower in a pot of salted water for about 10-12 minutes until tender, then drain and set aside.
2. **Cook the Base:**
– In a large pan, heat 2 tablespoons of the butter along with the vegetable oil over medium heat.
– Add the cumin seeds and allow them to sizzle for about 30 seconds.
– Add the chopped onion and sauté until translucent, approximately 5 minutes.
– Stir in the minced ginger and garlic, cooking for another 2 minutes until fragrant.
3. **Add Vegetables and Spices:**

– Add the remaining 2 tablespoons of butter, lemon juice, and salt to taste. Stir until the butter melts and mixes with the bhaji.

6. **Toast the Pav Buns:**
– Slice the pav buns in half horizontally.
– Heat some butter in a pan over medium heat and toast the buns until golden brown on both sides, about 2-3 minutes.
7. **Serve:**
– Serve the hot pav bhaji with toasted buns, garnished with more fresh cilantro and lemon wedges on the side for squeezing over the bhaji.
