– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 cloves garlic, minced
– 1 tablespoon lemon juice
– 3 tablespoons pomegranate molasses
– 1 tablespoon honey
– 1/2 teaspoon ground cumin
– 1/4 teaspoon cayenne pepper
– 1 red onion, sliced
– 1 tablespoon fresh parsley, chopped (for garnish)
– Seeds from 1 pomegranate (for garnish)

Method

1. Preheat your oven to 200°C (400°F).

2. In a small bowl, mix together the sumac, olive oil, salt, black pepper, minced garlic, and lemon juice to form a marinade.

3. Pat the chicken dry with paper towels and place it on a roasting pan. Rub the marinade all over the chicken, ensuring it is coated evenly, and let it sit for 15 minutes to absorb the flavors.
