Ingredients
– 1.5 kg whole chicken
– 2 tablespoons sumac
– 1 tablespoon olive oil
– 1 teaspoon salt
– 1 teaspoon black pepper
– 3 cloves garlic, minced
– 1 onion, quartered
– 1 lemon, halved
– 3 tablespoons pomegranate molasses
– 200g couscous
– 350ml boiling water
– 50g almonds, toasted and chopped
– 1 tablespoon fresh parsley, chopped
– 2 tablespoons extra-virgin olive oil
– Salt and pepper, to taste
Method
1. Preheat your oven to 200°C (390°F).
2. Prepare the chicken by patting it dry with paper towels. In a small bowl, mix the sumac, olive oil, salt, pepper, and minced garlic to form a paste.
3. Rub the sumac paste all over the chicken, including under the skin for more flavor. Place the onion quarters and halved lemon inside the chicken cavity.
4. Place the chicken in a roasting pan, breast side up. Roast in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 75°C (165°F). Baste the chicken with pomegranate molasses during the last 15 minutes of cooking.
